Winemaking: Hand-harvested, hand-sorted, carefully destemmed, and lightly pressed. Fermented in temperature-controlled tanks. After primary fermentation, the grapes are macerated with the skins for a period depending on their ripeness and polyphenol content. Malolactic fermentation in stainless steel tanks. Aged in French barrels and barriques for approximately 24-30 months, followed by at least 4 months in bottle.
