Winemaking: The grapes are carefully selected and hand-harvested before being immediately transported to the cellar. 70% of the grapes are gently pressed, followed by 10-12 days of remontage and pigeage in temperature-controlled tanks. The wine is then aged for approximately 15 months in 15-20 hl barrels, followed by at least 6 months in bottle.
