All of Viliera Estate's sparkling wines undergo secondary fermentation in the bottle, and the bottle stirring (the process of collecting the sediment at the neck of the bottle) is also done by hand. The traditional, full-bodied, yeasty aroma gives it a complex and balanced taste that is unique to the orthodox. It has a refreshing acidity and rich fruitiness, and a lively, sparkling flavor. Served in South African Airways First/Business Class in 2015.

Winemaking method: Hand-picked healthy grapes before full ripeness. Whole bunches are very gently pressed according to the Champagne press method. Winemaking is carried out using the Champagne method (Method Classico). Only the cuvée (high-quality must) is used. Secondary fermentation in the bottle with the addition of yeast and sugar takes place for 6 weeks. Aging on the lees for 18 months.
