Winemaking method: Fully ripe grapes are harvested early in the morning to preserve freshness and delicate aromas. Fermentation takes place in temperature-controlled stainless steel tanks.
After harvest, SO2 is added. Destemming and débourbage are performed. Pure culture yeast, yeast nutrients, and enzymes are added. Fermentation is carried out for 10-20 days at a controlled temperature of 22-28°C with oak chips. Pressing is performed. SO2 is added. Blending is performed. Cooling and fixing is carried out in four stages until stable. Filtering is performed.
