Winemaking: To preserve the aromas and flavors, the grapes are hand-picked in the cool early morning hours and then gently pressed at a controlled temperature of 15°C using selected yeasts.
SO2 added after harvest. After destemming, pressing, and débourbage, pure culture yeast, yeast nutrients, enzymes, and tartaric acid were added. Fermentation was carried out for 10-20 days at a controlled temperature of 22-28°C. SO2 was added. Blending was carried out. Tartar stabilization was carried out for 7 days at 4°C. Tangential flow filtration was carried out.
