Winemaking: The vineyards are situated on Oligocene marl and conglomerate-limestone soils with an east/southeast exposure. Average vine age is 37 years. Certified organic and biodynamic. Hand-picked and gently whole-cluster pressed. Fermented in oak barrels for 3 months at controlled temperature. Bottled and aged on the lees for 8 months.
