Winemaking: The vineyards are located on steep, south-facing slopes on soils of shell limestone and sandstone from the Middle Jurassic period. The vines are 37 years old on average. Certified organic. The grapes are hand-picked and then gently and slowly whole-cluster pressed. Fermentation takes place in oak barrels for four months under temperature control. The wine is then bottled and aged on the lees for eight months.
