Winemaking: The vineyards are located on clay, marl and limestone soils with a south/southeast exposure. The vines are 35 years old on average. Certified organic and biodynamic. The grapes are hand-picked and then gently and slowly whole-cluster pressed. Fermentation takes place in oak barrels under temperature control for three months. The wine is then bottled and aged on the lees for six months.
