Winemaking: The vineyards, with an average age of 30 years, are located at the highest altitude of any Grand Cru in Alsace, facing southwest and on steep slopes of sandstone and limestone. The Mediterranean climate produces ripe, intensely aromatic grapes. Certified organic and biodynamic. Hand-picked and gently whole-cluster pressed. Fermented for three months in temperature-controlled oak barrels. Aged for eight months in oak barrels on a thin yeast sediment. Unfiltered and without added sulfites.
