Winemaking method: Made from 40-year-old vines. Spontaneous fermentation in stainless steel tanks (95%) and wooden barrels (5%), followed by 10 months of lees aging. Then, 4 years of lees aging in bottle. Dosage: 1-4g/L. Production volume: 4,000 bottles per year.
