Winemaking: This wine is made from the oldest vines in the finest plots and is produced using only the cellar's finest wooden barrels. The grapes are hand-picked, crushed and pressed. Decantation/débourbage is carried out naturally overnight, leaving a fine lees. Fermentation is carried out in 228L Burgundy oak barrels using wild yeasts. Aging is carried out for 12 months in the pièces, 3-6 months in vat, and a total of 15-18 months. Lightly filtered before bottling.
