Winemaking method: Using relatively young vines, the yield is limited to ensure a balanced production. The grapes are crushed and then pressed with an air press. Fermentation is carried out at low temperature for 24 hours, with half in barrels (10% new) and the other half in temperature-controlled stainless steel tanks. Fermentation takes place on the lees for 10-12 months. The wine is not clarified, but filtered through a plate filter before bottling. Limited production of approximately 3,000 bottles.
