Winemaking: Vine age: Clonal vines 35 years old. Harvest: Hand-picked. Winemaking method: Immediate fermentation after destemming followed by 12-14 days of maceration. Frequent punching down. No enzymes or other additives are used to extract color. Blend of free-run wine and press wine, aged in barrels for 10-12 months. Lightly filtered and bottled without racking.
