Vinification: Vineyards over 30 years old. Pneumatic pressing. Must chilled and settled for 24 hours. Fermentation takes place in barrels (10% new) and half in temperature-controlled stainless steel tanks. After 10-12 months on the lees, the wine is bottled unfined.
