Winemaking method: Selected plots of 40-year-old and 15-year-old vines are located at an altitude of approximately 250m on the Corton hills, facing south. Hand-picked, sorted, crushed, and destemmed. Immediate cold maceration before fermentation. Pudding extracts aroma, color, and tannins, without adding enzymes or heat. After 14 days of fermentation, the free-run wine is blended with the press-run. Aging in barrels for 12 months (20% new). Lightly filtered and bottled without fining.
