Burgundy Aligote

Domaine de la Monette, Bourgogne Aligote

Bright yellow with a brilliant aroma of acacia flowers. Fresh green apple, citrus fruits, and complexity typical of Aligoté. Roundness derived from aging in wooden barrels, and a refreshing, long finish are also enjoyable.

Winemaking method: Organically grown since 2009 (officially 2010). Ecocert certified in 2013. The vines are from three Aligoté vineyards around the domaine, ranging in age from 65 to 100 years old. To protect the vines, most of the work in the fields is done by hand, not by machine. Yields are low: 25hl/ha, hand-picked. After sorting, the grapes are cold-soaked for 24 hours at 8°C. Alcoholic and malolactic fermentation in 500L old barrels. Aging on the lees for 8 months in old barrels and 2 months in tank. Lightly filtered and bottled.
