Winemaking method: Grapes are transferred to a pneumatic press using gravity. They are immediately clarified and then slowly aged on the lies in tanks. After 10 months of ageing in stainless steel tanks, the wine is bottled for one year in a hand-dug tufa cellar, protected from light and at a constant temperature. The average age of the vines is 35 years.
