Winemaking: Late-harvested grapes. Cold maceration, fermentation at approximately 25-28°C. Aroma extraction by pumping over and punching down. One-third of the wine is aged for 3-6 months in old French barrels. One-third is aged for 3-6 months in oak staves.
The remaining third is aged in concrete tanks.
