Spy Valley, Spy Valley Chardonnay

The wine has a distinctive aroma of stone fruit and melon, with a hint of brioche. The palate is rich with layers of stone fruit flavors, with a subtle hint of wood casks. The creamy texture and long, harmonious finish create a wonderful balance.

Winemaking method: Vertical vineyards with thinning of branches and bunches to limit yields. Harvested at full ripeness. Gently pressed, followed by a short stabilisation period, fermented in French oak (21% new), with partial malolactic fermentation. Blended 10 months after harvest. Aged on the lees in tank for two months before bottling.
