Winemaking: SO2 added after harvest. Destemming, pressing, débourbage, oak wood. Pure culture yeast/yeast nutrients/enzymes added. Fermented for 20 days at a controlled temperature of 22-28°C with oak chips. SO2 added. Blending. Tartaric acid added, sugar added. Cool and set in the refrigerator. Cross-flow filtration. SO2 adjusted.
