Winemaking method: 70% of the grapes are destemmed, 30% are whole bunches. Spontaneous and malolactic fermentation. Open-top tanks are used, with whole bunch fermentation grapes in the middle layer to extract flavors. The stems provide structure and tannins to the wine. Maceration for 10 days after fermentation. Aging in French oak (20% new) for 10 months before bottling. A coarse filter is used for bottling.
