Winemaking method: Using the Champagne method, healthy grapes picked slightly early are gently pressed whole. Only the cuvée (the highest quality juice) is blended, and then yeast and sugar are added for a secondary fermentation in the bottle over approximately six weeks. The wine is then aged on the lees for approximately 18 months. This aging process allows the wine to retain its brightness while softening the flavor, achieving a rich balance of maturity and fruitiness.
